Roasted Red Pepper and Goat Cheese Pasta



Ingredients:

Pasta ½ lb, cooked per direction

Butter 2 tbs

Olive oil 1 tbs

Garlic 2 cloves, chopped

Onion 1 small, chopped

Red peppers 2 large, roasted

Goat cheese 4 oz or ½ cup

Parmesan cheese ¼ cup

Feta cheese ¼ cup

Basil leaves handful

Paprika 1 tsp

Oregano 1 tsp

Salt per taste

Black pepper ½ tsp

Lemon juice 1 tsp


Method:

Step 1

Cook the pasta according to directions on the box. Keep them al dente! Once the pasta is cooked drain the water saving about 1 cup of pasta water. Drizzle the pasta with olive oil and keep aside.

Step 2

Chop the roasted red peppers, garlic and onions.

In a pan add some olive oil. Sauté the garlic and onion until light pink and aromatic. Add the roasted red peppers, some basil and a little salt. Add the paprika and oregano and let it sauté for a couple of minutes until the flavors combine. Let it cool for a few minutes or add an ice cube to this. Using a blender or processor blend the red peppers to a fine or chunky consistency per your taste.

Step 3

Add butter to a pan. Add the cream and goat cheese to it and let it come to a slow boil. Add the red pepper paste and stir well. Add about ¼ cup pasta water to this and give it a stir. Reserve the rest and use of you need to. The pasta water will thicken the sauce. Add parmesan cheese and feta cheese to the sauce and let them blend in as well. Once the sauce is slowly simmering and is of the consistency that you desire. Toss in the cooked pasta and coat it well with the sauce.

Step 4

Plate the pasta and garnish with freshly grated parmesan cheese and basil leaves!
