Pasta Pomodoro Sauce

Ingredients

  • 1 onion, diced

  • 1 clove garlic, minced

  • 2 (14.5 oz cans or 1, 28 oz) Italian-style diced tomatoes, undrained

  • 1 tablespoon of tomato paste

  • 1 tablespoon dried basil leaves

  • ½ teaspoon dried oregano

  • ½ teaspoon salt

  • ½ teaspoon ground black pepper

  • ½ tsp cayenne pepper

  • 1 teaspoon white sugar

  • 2 tablespoons olive oil

  • • 1 tablespoon butter

Steps

In a saucepan, sauté onion and garlic in olive oil over medium heat until soft. Add tomatoes, tomato paste, basil, sugar, oregano, cayenne, salt, pepper with 1 cup water. Bring to boil and let it simmer for 10 mins until the flavors blend together. Add water as per the consistency that you want. If you are adding the sauce to pasta right away, adding 1 cup of pasta water gives the sauce a nice starchy texture. Reduce heat, add butter and simmer 5 more minutes. Ready to serve with your favorite pasta.

Notes

  • Variation: Add ½ cup of fresh cream to make the sauce creamy!
