Chicken Diavolo

A spicy and flavorful main dish made with chicken and robust peppers. It is colorful and delicious which makes any meal an extra special one.


Ingredients:


Chicken breasts ( cut in cutlets) or thighs, 6-8 pieces

Red bell pepper 1 large, chopped small

Jalapeno 1, chopped

Garlic 4 cloves

Tomato paste 2 tbs

Lemon juice juice of half a lemon

Paprika 1 tsp

Salt 1 tsp

Olive oil 3 tbs + for cooking

Flat parsley 1 bunch

Broccolini 1 bunch, stalk cut lengthwise in half



Method


Step 1:

Make the marinade- Process together peppers + jalapeno + garlic + tomato paste + lemon juice + salt + paprika and olive oil. Once smooth stir in the parsley.


Step 2:

Marinate the chicken in the marinade. Hold about ½ cup of marinade for serving later. Make sure all the chicken pieces are well coated with the marinade. Let it sit for 20 mins.


Next:

1) Heat olive oil in a heavy bottomed pan.

2) Using tongs slowly lower the chicken pieces onto the pan. Let the chicken sear on both sides for a couple of minutes, then turn the heat down to medium. Let the chicken cook about 5 mins both sides until it is cooked thoroughly.

3) Once chicken is cooked transfer them to a platter and let it rest for a few minutes.

4) In the pan, add a little more olive oil if necessary. Scrape the brown flavorful parts on the pan. Toss in the broccolini. Add salt, pepper and a splash of lemon juice. Stir for a few minutes until the veggies cook to your desired level.

5) Add the chicken back to the pan and let the flavors blend together.

6) Sprinkle parmesan if you like.


Ready to serve with a crisp salad or pasta!
